SALUMI is a generic term that, in Italy, refers to cured pork products, including, but not limited to, what we call Salami.  Pancetta and Prosciutto are other examples.  Anyway, USDA regulations prevent importing the myriad of regional salumi available to Europeans.    Consequently, in the last few years a few artisan producers have created handcrafted salumi in America.  These products are just now achieving national distribution.  We have invested in 1 of these, Fra'Mani, but have sampled the others and are impressed with all of the products mentioned here.
Additionally, one importer has worked diligently to import the best cured meats from Spain by creating a USDA-approved infrastructure to allow the importation of pata negra, jamon iberico into to United States.  That importer la Tienda, offers many excellent products. Check them out.
